Boiled Eggs

Put eggs in a large enough saucepan to be able to cover them with at least 1” of cold water.  Bring to a boil.  Cover and turn heat off for 15 minutes (20 minutes if using a gas stove.)  After 15 minutes drain water and immediately put eggs in ice water.  Wait 5 minutes before peeling.
