Scalloped Potatoes

 

5 medium potatoes, peeled, quarterd and sliced 1/4” thick (about 3-4 cups)

4 tablespoons butter

3 tablespoons flour

1 tsp. salt

1/4 tsp. pepper

2 1/2 cup milk

1/4 cup minced onion

1 tablespoon butter

 

Make white sauce:  Melt butter in saucepan.  Blend in flour, salt and pepper.  Cook over medium heat, stirring constantly, until mixture is smooth and bubbly.  Whisk in milk.  Heat to boiling, stirring constantly.  Boil and stir 1 minute.

 

Arrange potatoes in greased 2 quart casserole in the following layers:

 

Potatoes (1/3)

Onion (1/2)

Sauce (1/3)

Potatoes (1/3)

Onions (1/2)

Sauce (1/3)

Potatoes (1/3)

Sauce (1/3)

Dot with 1 tablespoon butter.

 

Cover and cook in 350 degree oven 30 minutes.  Uncover and cook until potatoes are tender, 60 – 70 minutes longer.  Let stand 15 minutes before serving.
