Spanish Rice
1 lb. ground beef 1 large onion, chopped 1 large bell pepper, chopped 4 strips bacon, diced 3 cups tomato juice 1 cup prepared brown rice (White is okay, increase tomato juice to 1 qt.)
Prepare rice according to package directions (or use my recipe for Foolproof Brown Rice.) Cook ground beef, onion, pepper, bacon in dutch oven until meat is cooked through and water is cooked off. Add tomato juice. Bring to boil. Add prepared rice. Add salt if necessary. Place in casserole dish. Bake @ 350 for 1.5 hours (1 hour if using white rice.)
