Instant Potato Pancakes

Instant Potato Pancakes

 

1 1/3 cup instant potatoes

3/4 cup  self-rising flour (Mix 2 cups flour with 1 tsp each baking powder,

          baking soda, salt)

1/4 cup minced onion

1/2 tsp. salt

4 tablespoons butter, softened

2 cups milk

 

Mix all but milk together.   Stir in milk. Mix well (There should be “spots” of butter throughout.) Let sit 5 minutes to let potatoes absorb some of the milk.  Cook on greased griddle until lightly browned.  Turn over carefully with large spatula.   Serve hot.

 

These are wonderful as a last minute side dish spread with butter.
