Blackened Fish 1 (Mud’s Way)
Fish Fillets Blackening Spice (click here for recipe) Unsalted butter
Cover both sides of fish generously with blackening spice. Melt butter in cast iron skillet until very hot. Fry fish on both sides, about 1 minute on each side, depending on thickness of fish.
Blackened Fish 2 (Authentic Cajun)
Unsalted butter, melted Fish fillets Blackening spice (click here for recipe)
Have melted butter and blackening spice ready. Heat cast iron skillet until VERY VERY hot. This must be done outside because it makes a lot of smoke. Dip fillets in melted butter, cover generously with blackening spice and place in hot skillet. Fry about 45 seconds on each side.
