Beef & Broccoli

Beef and Broccoli

 

~1 lb. sirloin steak, cut into thin strips

1 Tablespoon cooking oil

1 med. Onion, quartered and thinly sliced

~1 lb. fresh broccoli florets, sliced into bitesize pieces

2 cloves garlic, minced

3 cups low sodium beef broth

3 Tablespoons sugar

1/3 cornstarch, dissolved in 1/2 cup water

Soy sauce to taste

Prepared rice

 

Mix sugar with beef broth and set aside.  Mix cornstarch with water and set aside. 

 

Brown steak in oil in large skillet.  Add onions and stir-fry until translucent.  Add broccoli and garlic and a few shakes of soy sauce and stir-fry about a minute.  Add about 2 cups of beef broth.  Bring to a boil.  Cover pan and reduce heat to med/low.  Cook about 3 minutes or until broccoli is al dente.  It should be a little harder than you like it, as it will continue to soften as you go along. 

 

At this point you can add the remaining broth if you like more “sauce” in your dish.  Bring to a boil.  Using a slotted spoon or whisk, gradually add the cornstarch mixture.  You can whisk it into one section of the sauce to further dissolve it, and then mix it into the rest with a regular spoon or spatula.  (You’ll know what I mean when you get there.  It’s hard maneuvering around those chunks of meat and broccoli with a whisk.)  Let simmer over low heat about 5 more minutes.  Serve over hot rice.
