Thin and Crispy Personal Sausage Pizzas (Serves 4, about 325 calories each)
4 whole wheat tortillas (~110 calories each) 1 cup Contadina Pizza Quick Sauce 1/4 lb. shredded mozzarella cheese 3/4 lb. prepared lean Italian sausage (see recipe below) OR use commercially prepared lean sausage (e.g. turkey), cooked Sautéed mushrooms, bell peppers, onions as desired
Preheat oven to 400.
Prepare pork sausage as directed below. Set aside. Prepare vegetables by sautéing each in a very small amount of olive oil until slightly softened. Set aside.
Place tortillas in a single layer on a baking sheet. Bake 4 minutes per side or until crisp. Spread 1/4 cup sauce on each tortilla. Top each with 1 oz mozzarella, 1/4 recipe sausage, veggies. (I put the cheese on top rather than on the bottom. I figured this would bind the toppings together so they didn’t fall off.) Return to oven. Bake 2-4 minutes or until cheese is completely melted. Cut into 4 wedges.
Note: It is critical that you do not attempt to make a pizza "crust" from a low-carb tortilla. It will smoke and burn, without becoming crisp.
Lean Italian Sausage
3/4 lb. extra lean ground pork
Mix all together well. Cook in nonstick skillet over medium-high heat until no longer pink.
