Party Potatoes
4 large potatoes 1/4 cup chopped green onions 4 oz. cream cheese 1/2 cup sour cream 6-8 slices bacon, cooked and crumbled 1 cup shredded cheddar cheese
Prehead oven to 350. Boil and mash potatoes. Add remaining ingredients except cheese. Mix in with electric mixer. Stir in cheddar cheese. (The idea is to let the potatoes cool somewhat so that when you add the cheese it doesn’t melt instantly and retains the yellow flecks in the finished product.) Put in buttered (or use Pam) casserole dish and bake for 30+ minutes or until slightly brown on top. |
