Oven Fried Chicken or Pork

 

1 (5 oz) box melba toast

1/2 tsp. salt

1/2 tsp. garlic powder

1/2 tsp. onion powder

1/2 tsp. paprika

1/2 tsp. thyme

1/8 tsp. sugar

2 tablespoons mayonnaise or cooking oil

2 eggs, beaten

 

1 whole chicken, cut up or 4 boneless breasts, pork chops or fish fillets

(For ultimate flavor, marinate meat in Italian dressing at least 4 hours)

 

Break melba toast into pieces.  Put in Oscar or other food processor.  Add remaining ingredients except oil.  Process until melba toast is reduced to coarse crumbs.  Transfer to bowl.  Work mayonnaise in with fingers. 

 

Preheat oven to 425.  Coat bottom of rimmed cookie sheet with oil.  Beat eggs in a shallow bow.  Dip meat in beaten egg; let excess drip off.  Coat well with coating mix.  (It helps to press coating mix firmly into meat.)

 

Baking times:

Boneless chicken or pork: Bake 10 minutes; turn pieces over and bake another 10 minutes.

Nuggets:  Bake 10-15 minutes; remove.

Chicken pieces:  Bake 20 minutes.  Turn pieces over and bake another 20 minutes.
