Dirty Rice

Dirty Rice

 

1 c. brown rice, uncooked
1/2 teaspoon salt
1 tablespoon butter or margarine

8 oz. raw ground pork

1 large bunch green onions, chopped (including tops)

1 bell pepper, chopped

1 3/4 c. chicken broth

1 Tablespoon coarsely ground black pepper

1/4 teaspoon cayenne pepper

 

Preheat oven to 350.  Spray 2 qt. casserole with Pam.  Put rice in casserole.  Sprinkle with salt.  Dot lightly with butter. 

 

Brown pork in skillet.   Add veg’s and cook to deglaze pan. Add pepper and chicken broth.  Bring all to a good boil and pour over rice.  Mix lightly with rice.  Cover tightly with foil and then put lid on.  Bake 1 ½ hrs.  Stir to combine rice and veg’s thoroughly.  Adjust seasonings if necessary.

 

Note:  Don’t try to mix the rice and veg’s too thoroughly before baking.  It works better to leave the rice somewhat under the veg’s and then stir to combine afterwards.
