Pork Fried Rice

Pork Fried Rice

 

6 strips bacon

1 lb. raw pork, cut into thin strips

1 whole bunch green onions, chopped

1/2 lb. mushrooms, chopped

4 eggs, scrambled without milk

3 cups prepared white or brown rice

½ - 1 cup frozen peas and carrots, cooked

 

Cook bacon in large skillet or dutch oven.  Crumble and set aside.  Reserve fat.  Cook pork in a little of the fat.  Remove and set aside.  Add a little fat back into pan and stir-fry the mushrooms and onions.  Add remaining ingredients and return bacon and pork to pan.  Heat through..  Season with soy sauce.

 

Hint:  While your rice is cooking, cut up your veg’s, meat, and scramble the eggs.  It’s much easier when this stuff is ready in advance.
