Grandma Johnson’s Fried Eggs

 

1 tablespoon butter

2 eggs

few dashes each salt and pepper

2 tablespoons water

 

Melt butter in small nonstick skillet over high heat until bubbly.  Break eggs into pan.  Sprinkle with salt and pepper.  Continue to heat until white is set a little (about 20 seconds).  Pour 2 tablespoons water around edge of pan.  Immediately put lid on pan and shut off heat.  (If you have a gas stove you may have to keep stove on very low.)  Eggs will be set in about 3-5 minutes.
